Soup Season is Here

Winter season is my cozy season. And for me, cozy season means soup season. There is nothing better than warming up on a cold night with a warm bowl of soup. Having soup for dinner is such a quick and easy way to eat, if you are busy on the go like me. I can hit almost every food group in one bowl. Plus, if I throw it in the crockpot, it is like an extra bonus!

Fun fact, I used to hate cooking. I actually would have preferred to bake. But after being on my own and then having a family to care for, I realized cooking was something I needed to embrace. Honestly I got pretty good at it too. I think it took me so long to embrace cooking because I was so intimidated by it. But cooking can be easy! Today I want to share a few of my favorite soup recipes that are in my rotation!

Chili

This was my mom’s staple recipe. She was not the best cook by any means, however, my mom had the best chili. I was unable to find her exact recipe after she passed away, but I did find a similar one. I top my chili with jalapenos, cheese (a must), a little sour cream, and a few of my favorite tortilla chips, La Fiesta chips, made in Michigan, which is even better! Spicy Thai Coconut Chicken Soup

We love Thai food in our house, so when I found this Spicy Thai Coconut Chicken Soup and it turned out great, I knew this was a keeper! I like to swap out snow peas for mushrooms and I also like to serve with brown whole grain rice!

Zuppa Toscana Soup

Zuppa Toscana was my go-to soup every time I went to Olive Garden. When I have a craving for this soup or Olive garden, this recipe is a must. The recipe for a healthier version of Zuppa Toscana always hits the spot. This blog is also one I visit often for any delicious and pretty simple and clean recipes!

Soups are a great starting point for anyone who is learning to cook, wants to cook at home, or just needs a quick and easy meal! Soups are versatile because you can easily swap out some ingredients for others. You can also add as much of each ingredient as as you want. Finally, soups are perfect for meal prepping and some to even double batch and freeze one for a later time.
