Air Fryer Recipes for the Busy Mama

When I first saw everyone buying an air fryer, I didn’t get the hype. I like to eat healthy. Air fried Oreos? No thanks. Then, my mother-in-law made us an air-fryer dinner; my fingers couldn’t type fast enough when making that Amazon order.

Being a working mama with a toddler and newborn means there is zero time for cooking, but I have found some tasty, healthy, and easy recipes for. These days, I can’t imagine making dinner without my air fryer. Maybe I will even give fried Oreos a try.

Everything Bagels

Directions: Mix 1 cup of fat-free greek yogurt, 2 teaspoons of baking powder,  and ¾ of a teaspoon of salt in a bowl with a spatula. Place flour on a hard surface and knead the dough for 2-3 minutes. Cut dough into four pieces and roll each into ¾ inch ropes. Twist each rope and form your bagel. Brush 1 egg white (beaten) over bagels and sprinkle everything seasoning. Bake in the air fryer at 250 degrees for 18 minutes (time/temp is for toaster oven air fryer).

Meal Idea: These taste great with egg, cheese, and bacon for tasty breakfast sandwiches. Add Ta side of fruit and you have a healthy meal. You can even make the bagels ahead of time.

 

Garlic Knots

Directions: Mix 1 cup of fat-free greek yogurt, 2 teaspoons of baking powder,  and ¾ of a teaspoon of salt in a bowl with a spatula. Place flour on a hard surface and knead the dough for 2-3 minutes. Cut dough into 8 pieces and roll each into ¾ inch ropes then tie in a knot. Bake at 250 degrees for 20 minutes (time/temp is for toaster oven air fryer). Melt 2 teaspoons of butter and brush over knots after they are done baking. Sprinkle parmesan cheese on top. 

Meal Idea: Serve as a side with three-cheese tortellini. All you need to do is boil the noodles and heat the sauce! 

 

Chicken Tenders

Directions: Beat 2 eggs then set them aside in a shallow bowl. Mix 1/2 cup panko and 1/2 cup bread crumbs into another shallow bowl. Dip 12 thawed chicken tenders into the egg and then into crumb mixture (both sides) and spray with olive oil cooking spray. Bake at 400 degrees for 6-7 minutes on each side.

Meal Idea: Serve tenders with healthy potato wedges! Cut potatoes into wedges, spray with olive oil cooking spray and sprinkle sea salt and pepper. Bake in the oven at 425 degrees for 25 minutes. Make sure to flip the wedges midway.
